What is beef jerky?
It is jerky made with beef. The word "jerky" itself comes from the Quechua term Charqui, which means "dried meat". Jerky is an early application of food preservation because jerky can be stored without refrigeration.
Why is my order status "pending"?
"pending" just means that it has not been shipped yet.
Why is most beef jerky so expensive?
The main reason is that all jerky is costly to make. Beef is about 60% water, so when it is dried most of the weight is evaporated. It takes about 2.5 Lbs of quality beef to make 1 Lb of jerky. Secondly, many jerky companies use expensive chemicals and preservatives when making their jerky, and they have a lot of waste just based on how they make it. We use minimal preservatives, especially in our Original and Fiery Hot flavors, and have a unique process is much more efficient and reduces waste considerably. This saves you money. Finally, ordering directly from us "cuts out the middleman" and allows us to pass the savings directly to you.
How is Big John's Beef jerky different from other brands?
Our jerky is made using a totally different and unique process (patent pending) than all other jerky on the market today. For one, it is smoked with real hickory wood chips for over 14 hours, unlike other brands which use artificial smoke flavoring and/or smoke it for just a few hours or less.
Which is better, Strips or Slabs?
Our Classic Strips are the way we have been making jerky for years and is preferred by most of our customers. Thick Slabs are just that-thick. Because they are so thick, and jerky is by definition dry, they can be difficult to eat for some customers. We recommend that new customers order our Classic Strips, and either a 2 oz bag of Slabs or Slabs for one bag of a Sampler Pack to make sure they enjoy them.
How long will my jerky stay fresh?
We guarantee unopened bags will remain fresh until at least the "Sell By" date. Once a bag is opened it should be eaten or frozen within 7 days.
What's the best way to store it?
Store your jerky in a cool dry place avoiding direct sunlight. Once a bag is opened, remove as much air as possible and close the bag. It can also be stored in the freezer. Make sure you allow it to get to room temperature before eating because IMHO jerky Popsicles aren't very tasty! Avoid the refrigerator because changes in temperatures can cause condensation in the bag and lead to a shortened shelf life.
Is jerky safe from bovine spongiform encephalopathy (BSE), aka Mad Cow Disease?
Beef jerky is perfectly safe from bovine spongiform encephalopathy (BSE), aka Mad Cow Disease — and has nothing to do with how the beef has been preserved. Additionally, it's not possible to contract Mad Cow disease from whole muscle jerky — BSE is found in the brain and spinal cords of infected cows.
Mad Cow disease is a result of protein mutations that result in neuromuscular degeneration. Although there is a human form of this disorder as well (Creutzfeldt-Jakob disease), the only way a human can contract the illness from cows is from consuming the flesh of an infected cow. The chances of this are negligible at this point in time because the USDA (as well as the equivalent agencies of other nations) increased random testing of cows and tightened restrictions of the use of high-risk animals in the production of anything that would reach the mouths of humans or our pets (cow carcasses were used heavily in the production of pet food in the past, as well as in the production of feed for other animals).
According to the USDA, as a result of changes in their testing and preventative measures, the number of cows that tested positive for Mad Cow fell 99% from 1992 to 2011. In 2011 there were a mere 29 Mad Cow-positive cases in the US — and USDA testing showed these had nothing to do with eating infected animal feed, further suggesting the risk to humans has been all but eliminated.
How do I place an order?

How long does shipping take?
We make our jerky fresh daily and currently have a backlog of orders and are making jerky around the clock at full capacity. Please allow 5-6 business days for your order to be shipped. We appreciate your patience. Transit time is generally 1-3 business days for US customers and 6-10 business days for Canadian/US Military customers.
Can I track my order?
You can track most orders. Tracking is not available for US and Military orders under 1 Lb and Canadian orders under 4 Lbs.
Can I order wholesale?
Yes. There are minimum purchase requirements. See our Wholesale info page for details on how to open a wholesale account. You can also checkout our Sampler packs and Combo Packs as some are priced at wholesale.

Where do you buy your beef?
We purchase our beef from a local distributor, who gets it from major meat processors in and around Pennsylvania.
Where is it made and packaged?
Right here in the USA! All of our jerky is hand made and packaged by hand in our USDA-inspected facility in York. PA.
